A deep amber quince paste from JimJam Foods, slow-cooked by hand on the farm at Stanley in North East Victoria until the fruit turns its colour. Fragrant, firm and gently tart, it is the oldest cheese-board pairing there is, and still the best.
Slice it thin with manchego, a hard cheddar or a soft goat's cheese, or serve it with cold ham. Three ingredients, no artificial additives, no preservatives.
